Banana bread

4 bananas
50 ml applesauce¹
25 gr coconut blossom sugar
175 gr flour
1.5 tsp baking powder
0.5 tsp baking soda
2 tsp cinnamon
A pinch of salt

Preheat your oven to 175°C.

Line a baking tin with baking paper or use a silicone baking tin.

Mash 3 bananas with a fork until you have a kind of purée.

Combine all ingredients (except the 4th banana!) in a large bowl and mix well.

Pour the batter into the baking pan.

Cut the 4th banana in half lengthwise and place both halves on top of the batter.

Bake for 45 minutes. Check after 45 min if the banana bread is cooked, if not; Place in the oven for another 3 to 5 minutes.

Let the banana bread cool completely outside the oven before slicing it (and yes, that’s very difficult, because your house smells super good now!).

¹ or use a neutral oil, e.g. sunflower oil
