100 ml vegetable oil
100 ml vegetable milk
75 g coconut blossom sugar – if you want it a little sweeter, make 100 g of it
2 tbsp flaxseed, put in a bowl with 4 tbsp water and leave for 5 minutes
125 gr oat flour
100 gr oats, keep a hand aside
2 tbsp maple syrup
75 gr nuts¹ – in this case 40 gr walnuts, roughly chopped and 35 gr sunflower seeds
2 tbsp cacoa nibs²
1 tbsp hemp seed²
150 gr dates³, finely chopped
100 gr flour
2 tsp baking powder
1 tsp cinnamon
A good pinch of salt, to taste
Preheat the oven to 180 degrees and line an oven dish with a silicone baking mat (or baking paper).
Put all ingredients in a large bowl and mix well, it will be a pretty sticky mixture.
Now transfur the dough on the baking mat and make the desired shape with your hands (or spatula, but I usually just use my hands for this). Make sure you maintain a thickness of about 1 cm.
Now divide the reserved oatmeal over it and press everything lightly.
Baking in 35-40 minutes. Keep an eye on your baking after 35 minutes.
¹ Pecans, almonds, pumpkin seeds etc are also delicious!
² If you don’t have cocoa nibs and / or hemp seeds at home, don’t fly to the store to get them! These oat-nut bars are still great without the cocoa nibs and the hemp seeds!
³ If your dates are a bit dry / hard, soak them briefly in some lukewarm water
