This recipe serves about 4-6 people.
Ingredients;
1 tbsp olive oil
2 onions, finely chopped
3 cloves garlic, finely chopped
1 bell pepper, diced
1 tablespoon cumin
1 tablespoon dried coriander
big pinch of chili flakes
1/2 teaspoon cayenne pepper
1/2 teaspoon cinnamon
1/2 teaspoon oregano
2 cans (400 ml) peeled tomatoes
1 can (140ml) tomato puree
2 cans of kidney beans, rinse well ¹
1 can of corn
200 gr green lentils
Salt and pepper to taste
brown rice
Place a large pan on the stove, when the pan is hot add the olive oil and onions. Fry the onions until they are nice and soft (5-8 minutes).
Then add all the herbs, the garlic and the bell pepper. Remember to stir well because spices bake quickly!
After 1 to 2 minutes, add the rest of all ingredients and stir well. Let everything simmer with a lid partly on the pan for 20-25 minutes, or until the lentils are tender. Make sure that in between you break the peeled tomatoes with a spatula/spoon and occasionally stir everything well.
Serve with the rice (or something else, of course, because again, this goes well with anything!)
¹ Or dried beans, which you then cook yourself and of course you can also just use another type of bean.
