This recipe is for about 4 people.
400 gr wholemeal spaghetti
250 gr cavolo nero¹
200 gr broccoli
6 cloves of garlic, roughly chopped
2 onions, roughly chopped
2 tbsp lemon juice
2 tbsp capers
2.5 tbsp olive oil
60 gr violife prosociano cheese²
Sea salt and pepper to taste
Cook the spaghetti according to the directions on the package.
Cook the kale and broccoli, together in a pan, for about 5 minutes.
Add 1 tbsp olive oil to the pan and fry the onions and garlic until soft, but not brown.
Place the kale, broccoli, garlic, onions, the rest of the olive oil, grated cheese, lemon juice, capers and 2 tablespoons of the pasta cooking water, salt and pepper in a blender or food processor and let it run until you have a nice smooth sauce.
Drain the paste and don’t shake it too much so that you have some moisture left. Stir the green sauce well through the pasta.
Garnish with some grated cheese if necessary
¹ Or “regular” kale
² This is a parmesan cheese substitute!
