How do you prepare that tofu ?! I must confess to you; the first few times we ate tofu, neither of us were too happy with it haha. Now that I know how to prepare it properly, we love it and eat it regularly. Cut the tofu into slices of about 2 cm, wrap in a kitchen towel and put something heavy on it for an hour. Cut the tofu into strips and let them marinate for a few hours (or all day) in the sauce that you like. Then you can fry the tofu (first the tofu itself and add the rest of the sauce after a few minutes). Do not bake for a long time, because then they will dry and that is not so tasty.
The sauce we used for this time ?!
1 teaspoon garlic powder
½ teaspoon ginger powder
½ teaspoon paprika
¾ teaspoon curry powder
½ tbsp mustard
2 tbsp soy sauce
2 tbsp sweet soy sauce
1 tbsp lemon juice
2 tbsp maple syrup
100 ml of soy milk
A good pinch of sea salt and pepper (to taste)
Put everything in a bowl and stir until you have a smooth nice sauce!
This recipe is for about 4 people;
2 tbsp sesame oil
6 cloves of garlic, finely chopped
2 tsp grated ginger
1 red onion, finely chopped
1 teaspoon of turmeric
6 tbsp soy sauce
4 tbsp mirin
2 l vegetable stock
400 gr mushrooms of your choice ¹
300 gr rice noodles or other noodles
375 gr tofu ²
Topping ideas:
Roasted tomato ³
Spring onion, finely chopped
Edamame beans
Sesame seed
Put the sesame oil in a pan over medium “heat”, add the ginger, garlic and red onion and fry for a few minutes until everything is soft. Add the soy sauce, mirin and turmeric and stir well. Add the stock, put the lid on the pan and bring to the boil, reduce the heat and let the stock simmer for 10 minutes on low heat. Add the mushrooms and simmer again on low heat for 10 minutes.
Cook the noodles according to the instructions on the packaging and fry the tofu in the meantime.
And as a last step and perhaps the best; laying out the bowls! Have fun!
