Fermented ketchup

Ingredients for a large pot¹

840 gr tomato paste²
½ cup maple syrup
½ cup apple cider vinegar
¼ cup sauerkraut liquid
¼ cup soy sauce
1.5 tsp salt
½ teaspoon of cayenne pepper
½ tsp paprika

Preparation method;

Put all ingredients in a large bowl and mix until well combined.

Transfer everything into a large glass jar; put the lid on very loosely! Otherwise you can get a ketchup bomb, this because of the carbon dioxide gases that are created during fermentation.

Then just leave it on your counter for 3-5 days. You can start tasting from day 3! If you like it so much, you can keep it in the fridge from then on. I usually leave it on the counter for 5 days.

This ketchup will keep for months in the fridge because it is fermented! But with us such a big pot goes through every month! haha
